Empanadas Arabes (Arab Empanadas)

Each country in Latin America has its own version of empanadas, and within each country there are usually different versions from province to province.  In my humble opinion, traditional Argentine empanadas are the best out there (I’ll put that recipe up one of these days).  Empanadas Arabes are completely different from traditional Argentine empanadas, but they are also very delicious, and they are easier/faster to prepare.  The recipe originates in the Middle East and I imagine has been “Argentinized” a bit over time.  Give them a try for something different and yummy!  Together with a salad they can make up a complete meal.   Continue reading

My mother-in-law, who is from Spain, taught me how to make this rice.  The recipe has been passed down from generation to generation without ever being written down.  I did my best to write it in a an easy to use recipe.  Most of the measurements are approximate: just put some in, taste it, and add more if you think it will taste better.  This is a large recipe that can of course be cut in half or further reduced.  You can also play around with it a bit by throwing different things in (different kinds of meat, other vegetables) to make it more suited to your tastes or to use up some things you have on hand. Little Quinoa Patties

I was introduced to Quinoa a few months ago and I have to say that although it looks strange, it is very delicious. Ever since then I have been searching for new recipes that included Quinoa. I found several good salad recipes, but I wanted something a little different. I finally found this recipe about a month ago and have already made it twice.  It is one of my favorite recipes right now and Herschel loves them too. We usually eat these as our main dish and then have vegetables of some kind on the side. I hope you enjoy them as much as we do. Get the recipe here!
