Creamy Lemon Penne with Grilled Chicken

This recipe is really good. I promise. We created it last night and liked it so much we made it again tonight. Try it and see what you think. 

Creamy Lemon Penne with Grilled Chicken

  • 3 Tbsp butter
  • 1/2 c chopped green onions
  • 3 cloves garlic minced
  • 1/2 c celery finely chopped
  • 1/4 c red bell pepper chopped
  • 1 tsp dried thyme (fresh would be best)
  • 1 tsp black pepper freshly ground
  • 1 Tbsp flour
  • 1 chicken bullion cube dissolved in 1/3 c. hot water
  • 2 c cream or half and half
  • 2-4 fresh basil leaves (dried will work too)
  • 1/4-1/3 c fresh lemon juice (about 1 lemon)
  • Zest of lemon (1-2 Tbsp)
  • 1 1/2 c. steamed broccoli (small pieces)
  • 1/2 lb grilled chicken cut into pieces
  • 1/4 c freshly grated parmesan cheese
  • 8-10 oz penne pasta

Melt butter in medium sauce pan. Saute onions, garlic, celery, bell pepper, thyme until tender. While vegetables are cooking, prepare chicken and broccoli. Once vegetables are tender, add black pepper, flour, and bullion. Bring to simmer and add cream. Cook on medium heat, stirring regularly until it begins to thicken. While sauce thickens, boil pasta until al dente. Add basil, lemon juice, and zest to sauce just before fully thickened. Once thickened, add broccoli, chicken, and parmesan. Pour sauce over pasta and top with parmesan cheese.
