Gnocchi with Creamy Pesto and Sausage

We put this together the other night using some gnocchi and basil pesto we had frozen. If you’re not familiar with gnocchi, they’re little balls of potato, flour, egg, and cheese and taste like dumplings — potato style. We also threw in some other things we had lying around, like sausage, carrots, and tomatoes. It was delicious and we hope you like it.

Gnocchi with Creamy Pesto and Sausage

  • 3/4 c. basil pesto (see link)
  • 1/4 c. milk
  • 1 lb. gnocchi
  • 1/3 lb. Italian sausage
  • 1 medium tomato diced
  • 1 carrot chopped
  • 1 stalk celery chopped
  • Freshly ground black pepper
  • Parmesan cheese grated

Warm, but do not cook, basil pesto and stir in milk. Boil gnocchi (2-3 mins. or until they float on top) along with carrots and celery (or steam those separately) then toss with tomato and browned sausage. Top with pepper and grated parmesan cheese.
